In a small saucepan melt chocolate chips with coconut oil. Once melted coat the sides of your silicone trays or cupcake liners with melted chocolate making sure sides and bottom are well coated.
Pop in the fridge for 30 minutes. Once hardened prepare peanut butter filling.
In a small bowl add peanut butter and powdered sugar, mix until a dough forms. Scoop out dough and form into balls and add to hardened chocolate shells (keep chocolate shells in silicone liners). Press down gently until fill being careful not to break chocolate. Once filled top with more melted chocolate so all sides and top are now sealed.
Place in the fridge for at least and hour.
Remove from trays and ENJOY :)
