Preheat oven to 375 F and grease a baking dish with cooking spray
In a skillet add sausage (out of casing) and cook with olive oil
While sausage is cooking cut up onion and green apples (peel and chop)
Take cooked sausage, transfer to a bowl and cook onion in same pan until caramelized. Add onion and apples to sausage bowl, add spices and mix.
Then take your stuffing mix, add water and let sit until bread is soft. Drain water and add in fixings, stir, transfer to greased baking dish, cover and bake for 30 minutes with tinfoil on top and 10 minutes without (to crisp up the top).
Serve with cranberry sauce, gravy and/or potatoes.
