Gluten-free & dairy-free ham, cheddar cheese and chive scones

Ingredients
  

  • 2 1/2 cups gluten-free flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup brown sugar light
  • 1 stick vegan butter cold. I use earth balance
  • 1 large egg
  • 1/2 cup dairy-free yogurt - I use plain Coconut yogurt
  • 2 tbsp oat milk
  • 4 ounces dairy-free cheddar cheese shredded
  • 4 ounces ham diced
  • 3 scallions chopped

Instructions
 

  • Preheat oven to 400 F. Coat a baking sheet with cooking spray or butter (vegan).
  • In a large bowl add flour, salt, pepper, baking powder, baking soda and brown sugar, combine. Cut the butter into small cubes and work into flour mixture until it resembles a coarse meal. Set aside.
  • In a small bowl whisk together egg, milk and yogurt, beating to combine. Add liquid to dry and stir until everything is well mixed.
  • Add in cheese, ham and scallions folding them into the dough with a spatula.
  • Take your dough and form 8 circles and then transfer them to your greased baking sheet.
  • Bake for 15-20 minutes or until the tops are lightly golden brown.
  • Cool for 5 minutes and serve. ENJOY :)
