8 years of being Gluten Free: My Story for Gluten Free Awareness Month » Theresa Healey
Hey friends! November is gluten-free awareness month so I wanted to take the time to bring awareness to celiac disease and gluten intolerance. As someone who has been on this lifestyle for over 8 years I thought it was finally time to share my story being gluten free. Every since I was a young kid I’ve always suffered with terrible digestion issues. This caused me to be sick constantly after eating, deal with bloating, hives and rashes. For a while I just dealt with these issues but as I got older I realized that it was entirely possible to heal myself even though it may take time. So, after visiting with numerous doctors we started to develop a plan. After seeing a doctor in Rhinebeck, he began allergy testing on me and started me on a new vitamin regime. And once the allergy panel came back, which was quite extensive, I knew what foods to eliminate from my diet. This is when the struggles began. Dealing with your digestion issues is one thing but when it comes to actually working to heal them, the changes I would have to make would be hard, but not impossible! 🙂 The food allergy panel reported back with a list of allergies that were 3 pages long, yes you read that right. Everything from pollen to blue dye was reported on there with my top allergies, labeled “anaphylaxes” as, shellfish, pineapple, avocados, egg yolk, nuts, mushrooms, kale, soy, and strawberries. So, I began cutting these foods out of my diet. I stuck with this for about a year and although it did give me some relief I was still experiencing mild digestion issues such as bloating, hives and rashes. When went back to the doctor, explained what was still going on and that is when he decided to run a stronger food panel that encompassed wheat and gluten. As you can already guess, the results came back and they showed that I did in fact have a gluten/wheat allergy. Adapting to the lifestyle change of avoiding those first few was hard enough but now that I had to cut an ingredient that is in 80% of foods seemed even more difficult, and it was. The first year was hard. I had to constantly read food labels, menus…. it would take me a long time to food shop or even order food at a restaurant because I wasn’t sure what I could/couldn’t eat. Fast forward to now, November 2020, 8 years later and eating the gluten free way has never been easier! It took some time, a lot of trail and error especially with cooking/baking but I made it through.
