Raw Vegan Coconut Date Bites {healthy, gluten free, vegan, no added sugars, paleo, raw, grain-free}

A few years ago I was eating at a cafe called “Aladdin” and I quickly fell in love with these chocolate and pistachio bites they used to make. Every week I would order them but then sadly they went out of business a few years ago and since then I have been on the hunt for their recipe. I have searched online, visited other cafes that sell similar cuisine and have tried making my own. It’s been quite the harrowing journey! Then, one day an idea popped into my head as I was watching the telly so I hit the local food mart, bought what I needed, came home and put the idea into reality. I blended, shaped, rolled, refrigerated and after 2 hours I finally took a bite and my eyes lit up! It was that same taste I remember from all those years ago! So I quickly jotted down the recipe and that is how my famous raw vegan pistachio bites recipe was born! Since then I have come up with a number of other raw vegan dishes such as raw vegan carrot cake, raw vegan date bites, no bake gluten-free cookie dough bites, and raw vegan Vietnamese vegetable spring rolls. All these recipes have received such high ratings that it was requested I make yet another raw vegan date bite recipe and I am happy to report that that day is finally here!

This dish is yet another take on my favorite Albanian cuisine and another recipe for you to add to your weekly dinners. These date bites are packed full of health and deliciousness and require minimal ingredients to make. All you need is dates, coconut flakes, almond slivers, almond extract and a blender. How easy! Then simply blend them up, shape into little bites, cover in more coconut, pop in the fridge for an hour or two and then you too can enjoy. 🙂

Ingredients

  • 8 pitted dates – raw, uncooked, no additives
  • 1/4 cup almond slivers – add more if dough is too sticky
  • 2-3 tbsp coconut flakes – unsweetened, no additives
  • 1 tsp almond extract
  • A plate coated with more coconut flakes for rolling

Directions

  1. Add all ingredients to a blender. Blend until a dough forms. If dough is too sticky then add more almond slivers.

2. Shape dough into bite size balls, roll in more coconut flakes and place in a covered container in the fridge for 2-3 hours.

3. Remove and ENJOY 🙂

Notes: Keep in an airtight container for up to 5 days in the fridge.
